Scampi with Bacon - Kind of Irresistible

Scampi has to be one of my favorite comfort foods: one in which I don’t indulge nearly often enough.

It’s simple, yet it tastes as though so much work went into the composition of flavors. I recommend it highly for last minute dinners that you may have unwillingly agreed to host. Remember, here, that the pasta is not the raison d’etre of this dish. Go light on the pasta for each person. While the below recipe is for two, figure 6-8 shrimp per person depending on how generous you feel, or how much you like the people for whom you’re cooking.

Regarding the pasta, I went with whole wheat here because I, increasingly, have become a big fan of the flavor and texture. Feel free to use whatever pasta you enjoy. Remember, I encourage you to play with your food; so go ahead and mess around with the ingredients. Don’t have meyer lemons, use normal lemons, or oranges, or…whatever. Just remember to enjoy yourself.

  • 1/2 cup White wine
  • 1 tablespoon of minced garlic
  • 1 teaspoon of red pepper flakes
  • 1/2 teaspoon of black pepper
  • 1/2 cup Meyer lemon olive oil (or meyer lemons – or normal lemons – squeezed into olive oil)
  • 1/8 pound of prosciutto
  • 1/2 cup chopped parsley
  • 2 cups of whole wheat penne
  • 16 shrimp
  • PARM

Peel and devein shrimp. Rinse and set aside in a paper towel.

Cook the red pepper flakes and garlic in olive oil  until the garlic starts to turn golden. remove immediately and let cool for a couple of minutes.

Add to a mixing bowl. Let cool.

Add white wine, shrimp and cracked black pepper.

Let sit for one hour in the fridge.

After an hour, remove bowl from fridge and remove shrimp from the bowl. Take a ribbon of prosciutto and wrap each piece of shrimp.

Add penne to boiling salted water and cook until al dente – 8-9 minutes depending on your preference.

Add wrapped shrimp to broiler pan. pour a little of the marinade over the top.

Cook until prosciutto is crispy and shrimp is cooked through – about 5-7 minutes depending on the broiler.

Add a bit of olive oil, a pinch of salt to pasta and toss with chopped parsley and grated Parm.

Serve shrimp atop pasta and pour sauce from broiler pan over the top.

If you have any meyer lemon, squeeze a bit over the top of the pasta and shave a little more parm over the top at the table.

    We’ve gone almost exclusively to whole wheat pasta at our house. An easy substitution, but we still feel like we are Behaving Ourselves. Can’t get enough of lemon-wine-garlic–a wonderful flavor combination :)
